Mermaid Groom's Cakes
The tradition of the groom's cake originated in the Southern U.S. Originally, groom's cakes were rich, liquor-soaked fruitcakes which were cut into small pieces at the end of the wedding reception and taken home by guests. This was before fruitcake got a bad reputation. Now all types of cake are used as groom's cakes.
Individually boxed miniature groom's cakes make wonderful wedding favors. The cakes pictured were created for a beach wedding; they are traditional brandied fruitcakes with Belgian chocolate, topped with a mermaid molded in marzipan, packaged with a Belgian chocolate starfish.
